MEAL IDEAS

Right Beside You are happy to cook for you and your family and believe it is vital that the family, especially Mum, eat well during the postnatal period.

Some example meals are included here or we are happy to cook any of your familiar favourites; just let us know before the visit.

Please note that all ingredients need to be supplied by yourselves but if there is a supermarket near by we are happy to fetch these for you during the postnatal hours worked if you wish.

 

SOUPS

Soups are a wonderful easy food for during the postnatal period.  They will provide a quick, nutritious meal for Mum and the family once prepared.  They will be prepared using fresh ingredients purchased by you, (or the doula will go and purchase them during the postnatal hours worked if you prefer) and then you can eat later as a family or even freeze and consume in the following days/week too

Minestrone Soup

30 minutes preparation time + 2 hours cooking time

 

Ingredients required:

1 tablespoon olive oil

1 onion

2 cloves garlic

2 carrots

2 potatoes

2 celery sticks

2 zucchini

2 cups shredded cabbage

125g (4oz) green beans

2 litres beef stock

425g (14oz) can chopped tomatoes

½ cup (80g/2 ¾ oz) macaroni

440g (14oz) can borlotti or red kidney beans

Grated Parmesan, to serve

Fresh thyme sprigs, to serve

Chunky Vegetable Soup 

30 minutes preparation time + 1hr 30 minutes cooking time

 

Ingredients required:

50g (1 ¾ oz) butter

1 leek

1 celery stick

1 large carrot

1 large potato

1 parsnip

1 swede or turnip

225g (7oz) sweet potato

½ cup (115g/4oz) soup mix (Soup mix is a combination of dried beans & pulses)

2 litres vegetable stock

1 cup (155g/5oz) frozen peas

125g (4oz) green beans

¼ cup (15g / ½ oz) chopped fresh mint

1/3 cup (20g ¾ oz) chopped fresh parsley

MAIN MEALS

Hearty meals which can be prepared by the doula while she is with you and then left to cook and enjoy by your family later in the day

Beef in Red Wine

Preparation time: 20 minutes - Cooking time: 2 hours - Serves 4

Ingredients required:

2 tablespoons olive oil

1 kg (2lb) chuck steak / braising steak or similar

12 baby onions

4 rashers bacon

2 cloves garlic

3 tablespoons plain flour

1 ½ cups (375ml/12 fl oz) red wine

2 bay leaves

5 sprigs fresh parsley

3 sprigs fresh thyme

1 thin slice lemon rind

1 ½ cups (375ml / 12 fl oz) beef or chicken stock

500g (1lb) flat mushrooms

COTTAGE PIE

Preparation time: 30 minutes - Cooking Time 1 hr 30 minutes - Serves 6-8

Ingredients required:

2 tablespoons olive oil

2 onions

2 carrots

1 celery stick

1 kg (2lb) beef mince

2 tablespoons plain flour

1 ½ cups (375ml / 12 fl oz) beef stock

1 tablespoon soy sauce

1 tablespoon Worcestershire sauce

2 tablespoons tomato sauce

1 tablespoon tomato paste

2 bay leaves

2 teaspoons fresh flat-leaf parsley

800g (1 lb 10 oz) potatoes

400g (13oz) parsnips

30g (1oz) butter

½ cup (125ml / 4 fl oz) milk

Banana Tea Bread  

 

Ingredients required:

500g (1lb 2 oz) ripe bananas

1 lemon

115g (4oz) unsalted butter

115g (4oz) soft light-brown sugar

1 teaspoon vanilla extract/essence

1 egg, size 2

115g (4oz) self-raising flour

115g (4oz) plain wholemeal flour

1 teaspoon baking powder

Pinch of salt

Teaspoon ground cinnamon

115g (4oz) seedless raisins

1 tablespoon icing sugar

 

Pear Scone

 

Ingredients required:

225g self-raising flour

¼ level tsp salt

50g butter

50g light brown sugar

¼ tsp ground cinnamon

2 pears
